Discover new plants, flavours and learn how to identify and harvest hyper-seasonal ingredients. Depending on the season, you can forage for mushrooms or other species around the Estate. Dave can also take you on a wilderness walk, on a bird watching walk or a tree identification tour. Dave is a true expert in his field and you will come away with a mass of new knowledge and excitement.
About Dave
Dave Winnard is one of the most respected foragers and naturalists in the North of England, having worked with and for organisations including the BBC, RSPB, Lancashire Wildlife Trust, City of Trees, Groundwork, Brockholes as well as many local councils, groups and organisations. He also works closely with a number of gin companies helping them use wild plants and fungi in their drinks.
Join Dave and other outdoor enthusiasts on a masterclass in mushroom foraging. Depending on the season, the grounds of Hawarden Estate are known to be a hot-bed of interesting fungi.
You’ll gain invaluable practical knowledge before taking to the ancient Estate woodland in search of edible fungi including ceps and chanterelles.

Thanks to our bucolic setting in the North Wales countryside, you needn’t sit still for long to hear the different songs of our native birdlife. This is a session for beginners and novices alike. Dave will lead you on a walk and bird-spotting masterclass for about 2 hours.
Take to the grounds of the Estate with Dave to seek out the artists of our melodical soundtrack. The lake is particularly wonderful for bird-spotting, and we are lucky enough to see a Kingfisher here from time to time.

During a private session with Dave, you’ll be led through our ancient parkland and will stop to observe and identify a range of different species.
